Air Fryer Sweet Potatoes Recipe
These sweet potatoes are crispy on the outside, fluffy and tender on the inside, and cooked in the air fryer. This recipe makes for a quick and easy side dish that can be transformed into a main course with a variety of simple homemade toppings.

- 4 large sweet potatoes
- 2 tablespoons avocado oil
- 2 teaspoons salt
Toppings
- 2 tablespoons honey
- 2 tablespoons butter
- 1 cup mini marshmallows
Preheat air fryer to 400 degrees F.
Wash and dry each potato, then poke 4-5 holes, about 1/2" deep, on all sides.
Place sweet potatoes and avocado oil into a large ziplock bag. Seal the bag and roll the potatoes around inside until they are completely covered in oil.
Remove sweet potatoes from the bag, then season with salt and place the potatoes into your air fryer basket. Cook at 400 degrees for 30-45 minutes, or until fork tender.
Once cooked, remove the sweet potatoes from the air fryer and let cool for 5 minutes. Slice each potato open with a knife and use a fork to lightly fluff the insides.
Top each sweet potato with about 1/2 tablespoon of butter, 1/2 tablespoon of honey, and 1/4 cup of mini marshmallows. Place under the broiler for about 1-2 minutes, or until the marshmallows have softened and are golden brown. Enjoy!
Storing instructions: wrap leftover potatoes well in foil, or place in an airtight container, and store for up to 4 days in the fridge.
Reheating: To reheat, you can either microwave or warm in a 320 degree oven for about 25 minutes, or until warmed through.
