Air Fryer Baked Potatoes Recipe

These air fried baked potatoes have the most fluffy, tender insides with perfectly crispy skin.  They also take only a fraction of the time that oven-baked potatoes do, and have the most delicious results.

Ingredients

  • 4 medium russet potatoes washed and dried
  • 2 tablespoons avocado oil
  • 1 tablespoon salt

Toppings

  • butter
  • sour cream
  • chives
  • bacon bits

Instructions

  • Wash and dry each potato, then poke with a fork 4-5 times on all sides.  Drizzle each with avocado oil and rub over the entire skin.
  • Season with sea salt, then place the potatoes into your air fryer basket. Cook at 400 degrees for 30-45 minutes, or until fork tender and the internal temperature of the potato reaches 205-210 F.
  • Once cooked, remove the potatoes from the air fryer basket and let cool for 5 minutes. Slice along the top of the potato, then squeeze together from each end. Use a fork to fluff the insides of the potato and top with your choice of butter, sour cream, chives and bacon bits. Enjoy!

Notes

Storing instructions: store leftover potatoes in an airtight container in the fridge for up to 3 days.
Reheating: to reheat, you can microwave for about 90 seconds, place in a preheated 350 degree F oven for about 30 minutes, or return the potato to the air fryer and reheat for about 15 minutes.
