Ingredients

  • ½ medium Onion (diced)
  • 2 tablespoon Butter
  • 1 whole Jalapeno Pepper (diced; stem and seeds removed)
  • 1 tablespoon Garlic (minced)
  • ½ cup Sour Cream
  • 8 oz Cream Cheese
  • ½ teaspoon Chili Powder
  • 1 cup Monterey Jack Cheese (shredded)
  • 1 Pkg. Super Sweet Corn
  • ½ cup Monterey Jack Cheese (for the top)

Instructions

  • Preheat oven to 400 degrees.
  • Spray an 8x8" or 9x9" pan with nonstick cooking spray.
  • Mince the onion, garlic, and jalapeno. 
  • In saute pan, melt the butter and add the onion, garlic, and jalapeno.  Saute on medium heat until the vegetables turn translucent and then slightly golden brown.
  • In a medium-sized mixing bowl, mix together the onion mixture, sour cream, cream cheese, chili powder, and 1 cup of the Monterey jack cheese. Mix
  • Stir in the corn and spread into the greased baking dish. 
  • Sprinkle the remaining ½ cup Monterey jack cheese on top.
  • Bake at 400 degrees for 25-30 minutes or until cheese is melted and golden brown.
  • Serve with your favorite crackers, tortilla chips or veggies.
