Blackberry Crumble Bars Recipe

Ingredients

Crumble Crust

  • 3 cups All-Purpose Flour
  • 1 cup Butter
  • 1 cup Sugar
  • 1 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • ¼ teaspoon Salt
  • 1 large Lemon (Zest)
  • 1 large Egg
  • 1 teaspoon Vanilla Extract

Blackberry Filling

  • 3 cups Blackberries
  • ½ cup Sugar
  • 2 Tablespoons Cornstarch
  • 2 Tablespoons Lemon Juice

Instructions

  • Preheat oven to 350 degrees F, then grease a 9"x13" baking dish or line with parchment paper and set aside.
  • In a food processor, pulse the butter and flour until the mixture resembles coarse meal. Add the sugar, baking powder, cinnamon, salt and zest of one lemon, then pulse again to combine. Finally, add the egg and vanilla extract and pulse just until evenly combined.
  • Add ⅔ of the crumble mixture to the prepared baking pan and press it down evenly using the flat side of a measuring cup or your hands. Set aside the remaining ⅓ of the crumble.
  • In a medium saucepan, combine the blackberries, sugar, cornstarch and lemon juice. Bring to a boil over medium high heat and boil for 2 minutes, mixing frequently.
  • Once it has thickened, pour the blackberries over the prepared crust and top with remaining crumble topping.
  • Bake in a preheated 350 degree oven for 25-35 minutes, or until the crumble topping is golden brown.
  • Remove from the oven and let cool completely before cutting squares or bars. Enjoy!
