Crockpot Cheesy Potatoes Recipe

This slow cooker cheesy hash brown potatoes recipe is an easy crockpot potatoes recipe. These slow cooker potatoes are a dump and go recipe and can be made ahead of time and then ready when you are. Everyone loves this crock pot casserole recipe.

Ingredients

  • 1 20 oz bag Shredded Potatoes frozen and pre-packaged work great
  • 3 tablespoons Butter
  • 1.5 cups Onion diced
  • 2 cups Cheese (reserve ½ c for topping)
  • 1 cup Sour Cream
  • 1 10.5 oz can Cream of Mushroom Soup
  • 2 teaspoon Garlic Salt

Instructions

  • Spray the inside of your Slow Cooker with non-stick cooking spray.
  • In a skillet, on medium heat, melt the butter and add the onions.  Sautee the onions, on medium heat,  until they are soft, tender and caramelized. 
  • In the slow cooker, add the shredded potatoes, caramelized onions, half of the shredded cheese, sour cream, cream of mushroom soup and the garlic salt. Stir until combined.
  • Spread the ingredients in to the bottom of the slow cooker with a spoon and add the remaining ½ cup of shredded cheese.  
  • Cook on high for 2.5- 3 hours or low for 4-5 hours. Or until the cheese is melted and slightly golden. Let the potatoes cool for about 10 minutes before serving.  Enjoy!
