- 2 cups Rice long grain, short grain, jasmine, or basmati
- 4 cups Chicken Broth or water
- 1 4-oz Can Green Chilies drained
- ½ bunch Cilantro minced
- 4 Tablespoons Butter
- 1 Tablespoon Garlic minced
- 1 large Lime juiced
In a rice cooker (or instant pot on rice setting) add the rice, chicken broth, green chilies, butter, and garlic.
Turn on the rice cooker (or instant pot) and cook on the white rice setting.
Once the rice has finished cooking, let it sit for a couple minutes to cool. Add the fresh lime juice, then fluff and stir with a fork.
Serve in a burrito bowl, salad, taco, or as a side dish. Enjoy!
