Ingredients

  • 2 cups Rice long grain, short grain, jasmine, or basmati
  • 4 cups Chicken Broth or water
  • 1 4-oz Can Green Chilies drained
  • ½ bunch Cilantro minced
  • 4 Tablespoons Butter
  • 1 Tablespoon Garlic minced
  • 1 large Lime juiced

Instructions

  • In a rice cooker (or instant pot on rice setting) add the rice, chicken broth, green chilies, butter, and garlic.
  • Turn on the rice cooker (or instant pot) and cook on the white rice setting.
  • Once the rice has finished cooking, let it sit for a couple minutes to cool. Add the fresh lime juice, then fluff and stir with a fork. 
  • Serve in a burrito bowl, salad, taco, or as a side dish. Enjoy!
