Best Chocolate Covered Strawberries Recipe

- 12 ounces Chocolate good quality chocolate
- 18 large Strawberries large, with stems
- 2 teaspoon Coconut Oil
- 4 ounces White Chocolate if desired
Wash and rinse the strawberries, lay them on a paper towel to air dry completely, 15 minutes to 60 minutes at room temperature. (Be sure they are completly dry)
Make a double boiler, place a pan on low heat with an inch of water and bring to a boil. Place a bowl (with the lid larger than the lip of the pot) on the simmering water.
Place ⅔ chocolate in the bowl. Stir gently with a spatula for several minutes or until chocolate is melted. Remove the melted chocolate from the heat and add in ⅓ more chocolate and the coconut oil. Continue to gently stir until all the chocolate is melted. (It should have a shiny appearance and smooth consistency.)
Set a sheet of parchment paper on a large baking sheet.
Dip each strawberry into the chocolate mixture, gently shake the strawberry to remove the excess chocolate. Place the strawberry on the parchment-lined tray.
If desired, add a contrasting kind of melted chocolate in a piping bag and drizzle the dipped strawberries.
You can also dip the strawberries into chopped nuts, sprinkles, or shredded coconut, or any other topping of your choice and then set it back on the tray.
Let the strawberries sit at room temperature until chocolate hardens, for about one hour, until the chocolate firms. Serve and enjoy!
