Garlic Herb Cheesy Potato Recipe
These Garlic Herb Cheesy Potatoes are a simple side dish that tastes great with just about anything. They are tossed in Italian herbs and garlic, oven-roasted, smothered in delicious cheesy goodness and then topped off with bacon bits and green onions.
Servings: 12 people
Roasted Red Potatoes
- 3 lbs Red Potatoes washed and quartered
- 3 Tablespoons Avocado Oil
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 tsp Dried Italian Herbs
- 1 tsp Salt
- 1 pinch Pepper to taste
- 2 cups Cheddar Cheese shredded
- ½ cup Bacon Bits
- 3-4 large Green Onions sliced thin
Preheat the oven to 425 degrees.
Place potatoes in a large bowl or a ziplock bag and drizzle them in 3 tablespoons of avocado oil. Toss the potatoes until evenly coated, then add the garlic powder, onion powder, Italian herbs, salt and pepper. Toss again until the potatoes are evenly coated.
Transfer the potatoes onto a parchment lined baking sheet, squeezing out as much of the seasoning from the inside of the bag as possible. Place the potatoes on an even layer on the baking sheet.
Bake at 425 degrees for about 20 minutes, or until the edges of the potatoes begin to brown. Using a spatula, turn the potatoes and cook for another 15-20 minutes so the other side can brown.
Once the potatoes are soft on the inside and crispy golden brown on the outside, remove from the oven and add shredded cheddar cheese and bacon bits. Return to the oven to roast potatoes for an additional 10 minutes, or until the cheese is melted.
Remove the potatoes from the oven and transfer to a serving bowl. Garnish with the sliced green onions, then serve immediately. Enjoy!
