Coconut Cookie Bars

  • ¾ Cup Brown Sugar
  • 1 ½ Cup Sugar
  • 1 Cup Butter (at room temp)
  • 2 teaspoon Vanilla
  • 3 large Eggs
  • 1 teaspoon Salt
  • 4 Cups Coconut (shredded)
  • 1 Cup Flour
  • 1 Cup Oats (old fashioned, rolled)


  • Preheat oven to 350 degrees.
  • In a mixer or mixing bowl, cream together the butter, brown sugar and white sugar until light and fluffly
  • Add the vanilla, eggs, and salt. Mix again.
  • Add the coconut, flour and oats and mix until combined.
  • Spread into a greased baking sheet.  (18" by 13")
  • Bake in a preheated oven at 350 degrees for 25-30 min.  When done, the edges and top of the cookie bars should be golden brown. 
  • Let cool and cut into bars.  Enjoy!
