Coconut Cookie Bars
Coconut lovers, this Coconut Cookie Bars recipe is for you!! They are chewy, and just a little crispy on top, and packed with loads of sweet coconut! These amazing cookie bars are going to be your family favorite in no time!
Servings: 15 people
- ¾ Cup Brown Sugar
- 1 ½ Cup Sugar
- 1 Cup Butter (at room temp)
- 2 tsp Vanilla
- 3 large Eggs
- 1 tsp Salt
- 4 Cups Coconut (shredded)
- 1 Cup Flour
- 1 Cup Oats (old fashioned, rolled)
Preheat oven to 350 degrees.
In a mixer or mixing bowl, cream together the butter, brown sugar and white sugar until light and fluffly
Add the vanilla, eggs, and salt. Mix again.
Add the coconut, flour and oats and mix until combined.
Spread into a greased baking sheet. (18" by 13")
Bake in a preheated oven at 350 degrees for 25-30 min. When done, the edges and top of the cookie bars should be golden brown.
Let cool and cut into bars. Enjoy!
