Avocado Cucumber Salad Recipe

- 1 cup Cherry Tomatoes washed and halved
- 1 large Avocado diced
- ½ med White Onion diced
- 1 large Cucumber peeled and diced into ¾" pieces
Dressing for Cucumber Avocado Salad
- 2 Tablespoons Olive Oil
- 2 Tablespoons Lemon Juice
- 1 teaspoon Italian Seasoning
- ¼ tsp Salt
- ⅛ teaspoon Pepper
- 1 Tablespoon Parsley chopped
To make the homemade dressing, add the the olive oil, lemon juice, Italian seasoning, salt, pepper and parsley in a medium bowl and whisk well.
In a separate large bowl, add the cherry tomatoes, avocado, onion and cucumber, then toss in the homemade dressing, or substitute ⅓ cup of Italian Dressing, and serve immediately. Enjoy!
