Coconut and White Chocolate Cookie

These White Chocolate and Coconut Cookies are a simple and easy oatmeal cookie recipe loaded with coconut and white chocolate chips.  They're the perfect cookie to customize for your favorite holiday.  Your family is going to love these amazing coconut and white chocolate chip cookies.

  • 1 cup Butter
  • 1 cup Brown Sugar
  • 1 cup Sugar White granulated
  • 1/4 tsp Salt
  • 2 large Eggs
  • 1 tsp Vanilla
  • 1/2 tsp Coconut Extract
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 2 1/2 cups Oatmeal regular rolled oats
  • 1 cup Flour regular all-purpose flour
  • 1 cup Shredded Coconut
  • 1/2 bag White Chocolate Chips
  • 1/2 bag M & M's It's fun to switch up the M and M's with the current holiday. (Valentine M & M's used here)


  • Preheat the oven to 350 degrees
  • Cream together the butter, sugar, and brown sugar.
  • Add the vanilla, coconut extract,  and eggs, one at a time, while mixing.
  • Mix in the oatmeal, shredded coconut, baking soda, baking powder, and oatmeal. Mix together.  Add most of the chocolate chips and half of the M and M's. (I like to reserve some to add to the top of the cookies after baking)
  • Drop cookie dough on a greased cookie sheet, 1 1/2" balls.
  • Bake at 350 degrees for 12 minutes or until the edges are golden brown. After you take the cookies out of the oven, add a few more M and M's and chocolate chips to the tops of each cookie. Let the cookies sit on the cookie sheet for 1-2 minutes longer and then transfer them to a cooling rack.
