Coconut and White Chocolate Cookie

- 1 cup Butter
- 1 cup Brown Sugar
- 1 cup Sugar White granulated
- 1/4 tsp Salt
- 2 large Eggs
- 1 tsp Vanilla
- 1/2 tsp Coconut Extract
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- 2 1/2 cups Oatmeal regular rolled oats
- 1 cup Flour regular all-purpose flour
- 1 cup Shredded Coconut
- 1/2 bag White Chocolate Chips
- 1/2 bag M & M's It's fun to switch up the M and M's with the current holiday. (Valentine M & M's used here)
Preheat the oven to 350 degrees
Cream together the butter, sugar, and brown sugar.
Add the vanilla, coconut extract, and eggs, one at a time, while mixing.
Mix in the oatmeal, shredded coconut, baking soda, baking powder, and oatmeal. Mix together. Add most of the chocolate chips and half of the M and M's. (I like to reserve some to add to the top of the cookies after baking)
Drop cookie dough on a greased cookie sheet, 1 1/2" balls.
Bake at 350 degrees for 12 minutes or until the edges are golden brown. After you take the cookies out of the oven, add a few more M and M's and chocolate chips to the tops of each cookie. Let the cookies sit on the cookie sheet for 1-2 minutes longer and then transfer them to a cooling rack.
