Coconut and White Chocolate Cookie

Ingredients

  • 1 cup Butter
  • 1 cup Brown Sugar
  • 1 cup Sugar White granulated
  • 1/4 tsp Salt
  • 2 large Eggs
  • 1 tsp Vanilla
  • 1/2 tsp Coconut Extract
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 2 1/2 cups Oatmeal regular rolled oats
  • 1 cup Flour regular all-purpose flour
  • 1 cup Shredded Coconut
  • 1/2 bag White Chocolate Chips
  • 1/2 bag M & M's It's fun to switch up the M and M's with the current holiday. (Valentine M & M's used here)

Instructions

  • Preheat the oven to 350 degrees
  • Cream together the butter, sugar, and brown sugar.
  • Add the vanilla, coconut extract,  and eggs, one at a time, while mixing.
  • Mix in the oatmeal, shredded coconut, baking soda, baking powder, and oatmeal. Mix together.  Add most of the chocolate chips and half of the M and M's. (I like to reserve some to add to the top of the cookies after baking)
  • Drop cookie dough on a greased cookie sheet, 1 1/2" balls.
  • Bake at 350 degrees for 12 minutes or until the edges are golden brown. After you take the cookies out of the oven, add a few more M and M's and chocolate chips to the tops of each cookie. Let the cookies sit on the cookie sheet for 1-2 minutes longer and then transfer them to a cooling rack.
