Cajun Chicken Alfredo Pasta Recipe

This Cajun Chicken Pasta combines juicy chicken and fettuccine pasta with creamy, spicy cajun alfredo sauce. It’s an easy way to add a little pizzazz and a lot of flavor to your regular weeknight dinner routine.

Ingredients

  • 1 pound Fettuccine Pasta
  • 1 pound Boneless Skinless Chicken Breasts
  • 1 tablespoon Olive Oil
  • 1 pinch Salt and Pepper

Cajun Chicken Alfredo Sauce

  • cup Diced Tomatoes
  • 2 teaspoons Garlic minced
  • 2 cups Heavy Cream
  • 1 cup Chicken Broth
  • 1-2 Tablespoons Cajun Seasoning to taste
  • cups Parmesan Cheese grated
  • 2 Tablespoons Fresh Parsley for garnish

Instructions

  • Cook the pasta in a pot of salted water, boiling until al dente according to package instructions.
  • Meanwhile, filet each chicken breast into 2 even pieces. Heat a large saucepan over medium high heat and add the olive oil. Once the pan is hot, add the chicken, season with salt and pepper, and cook until golden. Flip to the other side, place a lid on the pan, and continue to cook until the chicken reaches an internal temperature of 165 degrees F.
  • Once cooked, remove the chicken from the pan and let the chicken rest for about 5 minutes before slicing into strips. Do not clean the pan!

Cajun Alfredo Sauce

  • In the same large saucepan over medium heat, add the diced tomatoes and minced garlic. Stir and saute until the garlic is translucent. Add the cream, chicken broth, and Cajun Seasoning to the pan and use a wooden spoon to stir all the bits from the bottom of the saucepan. Bring to a boil, then continue to boil while stirring for 1 minute.
  • After 1 minute, add the grated Parmesan cheese, reduce the heat to medium, and simmer while stirring for about 5 minutes so that the cheese can melt and the sauce can reduce slightly.
  • Remove the Cajun Alfredo sauce from the heat and toss with the cooked fettuccine pasta. Add the sliced chicken and toss again. Garnish with fresh parsley if desired, and serve immediately. Enjoy!
