Ingredients

  • 3 cups All-Purpose Flour
  • 3 Tablespoons Sugar
  • 1 Tablespoon Baking Powder
  • teaspoon Baking Soda
  • teaspoon Salt
  • 3 Eggs
  • 3 cups Buttermilk
  • cup Butter melted, plus more for frying pancakes
  • 1 Tablespoon Vanilla Extract
  • 10 drops Green Food Coloring

Instructions

  • In a medium-sized mixing bowl, add the flour, sugar, baking powder, baking soda, and salt and whisk to combine.
  • In a separate mixing bowl, combine the eggs, buttermilk, melted butter, and vanilla extract and whisk well to break up the eggs. Add the green food coloring and mix again.
  • Add the wet ingredients to the dry ingredients and gently fold them together until well-combined. Do not overmix - the mixture should still be a little lumpy.
  • Heat a pan or non-stick griddle over medium heat, then add about a tablespoon of butter to grease the pan.
  • Transfer pancake batter to a piping bag and cut a small tip off of the end. Quickly pipe the outline of a four leaf clover onto the griddle and then fill in with pancake batter.
  • Allow the pancakes to cook until bubbles appear on the surface and the edges are beginning to look cooked, or about 2 minutes. Flip the pancakes using a spatula and continue to cook the other side until golden and cooked through, or about 1 minute more. Repeat this process with remaining batter.
  • Serve pancakes with butter, syrup, whipped cream, or your favorite toppings. Enjoy!
