This sweet potato casserole is a delicious egg and cheese casserole. If you love a little sweet potato, spicy pepper jack, and a hint of dijon, this is the breakfast casserole for you!

Ingredients
  • 8 Eggs
  • 1 Cup Shredded sweet potato (small shreds)
  • 1/4 Cup Milk
  • 1/2 Cup Ham, minced
  • 2 green onions (sliced thin)
  • 1/3 Red pepper (diced)
  • 1 Cup Pepper jack cheese (half in casserole and half on top before baking)
  • 1/2 Cup Cheddar cheese (shredded)
  • 1 tsp Dijon mustard
Instructions
  1. Crack and then beat the 8 eggs in a large bowl.  Mix in shredded sweet potato, milk, minced ham, sliced green onion, diced red pepper, the dijon mustartd, cheddar cheese and half of the pepper jack cheese.  

  2. Mix together all the ingredients. Pour into a greased 9 by 9 inch pan.  Sprinkle the remaining pepper jack cheese on top.

  3. Cover with plastic wrap and refrigerate for up to 24 hours or cook immediately. 

  4. Bake at 350 degrees for 30-40 minutes or till golden brown on top.

  5. Let sit about 5 minutes and then serve with salsa, sour cream, hot sauce or avocado. Enjoy!
