Sweet Potato Breakfast Casserole

This sweet potato casserole is a delicious egg and cheese casserole. If you love a little sweet potato, spicy pepper jack, and a hint of dijon, this is the breakfast casserole for you!

Ingredients

  • 8 Eggs
  • 1 Cup Shredded sweet potato (small shreds)
  • 1/4 Cup Milk
  • 1/2 Cup Ham, minced
  • 2 green onions (sliced thin)
  • 1/3 Red pepper (diced)
  • 1 Cup Pepper jack cheese (half in casserole and half on top before baking)
  • 1/2 Cup Cheddar cheese (shredded)
  • 1 tsp Dijon mustard

Instructions

  • Crack and then beat the 8 eggs in a large bowl.  Mix in shredded sweet potato, milk, minced ham, sliced green onion, diced red pepper, the dijon mustartd, cheddar cheese and half of the pepper jack cheese.  
  • Mix together all the ingredients. Pour into a greased 9 by 9 inch pan.  Sprinkle the remaining pepper jack cheese on top.
  • Cover with plastic wrap and refrigerate for up to 24 hours or cook immediately. 
  • Bake at 350 degrees for 30-40 minutes or till golden brown on top.
  • Let sit about 5 minutes and then serve with salsa, sour cream, hot sauce or avocado. Enjoy!
