Asian Chicken Lettuce Wraps Recipe

These Chicken Lettuce Wraps are filled with flavorful marinated chicken and topped with a homemade peanut sauce and your favorite toppings.  They make a delicious light lunch or tasty appetizer to go along with all sorts of Asian-inspired favorites.

Ingredients

Chicken for Lettuce Wraps

  • 2 pounds Chicken Breasts boneless, skinless, diced into ½" chunks
  • 2 Tablespoons Avocado Oil divided
  • ¼ cup Soy Sauce
  • 2 Tablespoons Lime Juice
  • 2 teaspoon Garlic minced
  • ½ teaspoon Ginger Powder or 2 teaspoons grated fresh ginger
  • 3 Tablespoons Water
  • 4 large Green Onions sliced
  • ½ teaspoon Red Pepper Flakes

Peanut Sauce

  • ¼ cup Peanut Butter
  • 2 Tablespoons Water
  • 2 Tablespoons Sugar
  • 1 Tablespoon Soy Sauce
  • ½ teaspoon White Wine Vinegar
  • 1 pinch Red Pepper Flakes (optional)
  • 1 teaspoon Lime Juice add after it's cooked and cooled

Other Ingredients

  • 2 heads Lettuce
  • ½ cup Carrots shredded
  • ½ cup Bean Sprouts
  • 2 cups Crispy Rice Noodles
  • ¼ cup Sweet Chili Sauce

Instructions

Lettuce Wraps Chicken

  • In a medium bowl, add the diced chicken, 1 tablespoon of avocado oil, soy sauce, lime juice, minced garlic, ginger, water, thinly sliced green onions, and crushed red pepper flakes.
  • Stir until combined, cover with plastic wrap and let marinate for 20 minutes - 2 hours in the fridge. Once finished marinating, remove chicken from the marinade with a slotted spoon to remove excess sauce.
  • In a large saucepan, add 1 tablespoon of avocado oil. Heat over medium heat until barely smoking, then add the chicken. Cook for about 2 minutes before stirring. Stir gently, then allow the chicken to brown slightly on the bottom before stirring again.
  • Repeat until the chicken is golden brown and cooked throughout. Transfer to a serving bowl and set aside.

Peanut Sauce

  • In a small pan, add the peanut butter, water, sugar, soy sauce, white wine vinegar, and crushed red pepper flakes. Heat over medium high heat while whisking and bring to a boil. Take off the heat and stir again. When the peanut sauce is cooled a little, add lime juice.
  • Remove from the heat and allow to cool to room temperature before stirring in the lime juice.

Assembling the Chicken Lettuce Wraps

  • Prepare lettuce leaves by peeling back the lettuce leaves and washing. Set on a paper towel until dry.
  • To each lettuce leaf, add a few tablespoons of cooked chicken, then top with shredded carrots, bean sprouts, and crispy rice noodles. Drizzle with sweet chili sauce and peanut sauce. Enjoy!
