Chicken for Lettuce Wraps
- 2 pounds Chicken Breasts boneless, skinless, diced into ½" chunks
- 2 Tablespoons Avocado Oil divided
- ¼ cup Soy Sauce
- 2 Tablespoons Lime Juice
- 2 teaspoon Garlic minced
- ½ teaspoon Ginger Powder or 2 teaspoons grated fresh ginger
- 3 Tablespoons Water
- 4 large Green Onions sliced
- ½ teaspoon Red Pepper Flakes
Peanut Sauce
- ¼ cup Peanut Butter
- 2 Tablespoons Water
- 2 Tablespoons Sugar
- 1 Tablespoon Soy Sauce
- ½ teaspoon White Wine Vinegar
- 1 pinch Red Pepper Flakes (optional)
- 1 teaspoon Lime Juice add after it's cooked and cooled
Other Ingredients
- 2 heads Lettuce
- ½ cup Carrots shredded
- ½ cup Bean Sprouts
- 2 cups Crispy Rice Noodles
- ¼ cup Sweet Chili Sauce
Lettuce Wraps Chicken
In a medium bowl, add the diced chicken, 1 tablespoon of avocado oil, soy sauce, lime juice, minced garlic, ginger, water, thinly sliced green onions, and crushed red pepper flakes.
Stir until combined, cover with plastic wrap and let marinate for 20 minutes - 2 hours in the fridge. Once finished marinating, remove chicken from the marinade with a slotted spoon to remove excess sauce.
In a large saucepan, add 1 tablespoon of avocado oil. Heat over medium heat until barely smoking, then add the chicken. Cook for about 2 minutes before stirring. Stir gently, then allow the chicken to brown slightly on the bottom before stirring again.
Repeat until the chicken is golden brown and cooked throughout. Transfer to a serving bowl and set aside.
Peanut Sauce
In a small pan, add the peanut butter, water, sugar, soy sauce, white wine vinegar, and crushed red pepper flakes. Heat over medium high heat while whisking and bring to a boil. Take off the heat and stir again. When the peanut sauce is cooled a little, add lime juice.
Remove from the heat and allow to cool to room temperature before stirring in the lime juice.
Assembling the Chicken Lettuce Wraps
Prepare lettuce leaves by peeling back the lettuce leaves and washing. Set on a paper towel until dry.
To each lettuce leaf, add a few tablespoons of cooked chicken, then top with shredded carrots, bean sprouts, and crispy rice noodles. Drizzle with sweet chili sauce and peanut sauce. Enjoy!
