Buffalo Chicken Bites Recipe

Buffalo Sauce
- ½ cup Brown Sugar
- ½ cup Frank's Red Hot Sauce
Chicken Bites
- 1 ½ pounds Chicken Breast cut into ¾" pieces
- 1 Tablespoon Avocado Oil
- ½ teaspoon Salt
- ¼ teaspoon Pepper
- 2 Tablespoons Blue Cheese
- 1 Tablespoon Chopped Parsley
- ½ cup Ranch Dressing
Buffalo Sauce
In a medium-size saucepan, add the brown sugar and hot sauce. Stir to combine, then bring to a boil, stirring occasionally. Boil the sauce for 1 minute, then set aside.
Buffalo Chicken Bites
Preheat oven to 350 degrees F.
In a large mixing bowl, add the chicken and drizzle with avocado oil. Season with salt and pepper, using tongs to mix. Transfer chicken to a baking sheet lined with parchment paper or a large cast iron skillet.
Bake for about 15 minutes, or until the internal temperature of the chicken reaches 165 degrees and is no longer pink.
Remove chicken from the oven, then toss the cooked chicken in the buffalo sauce. Stir until coated, then transfer to a serving platter and top with blue cheese crumbles and fresh parsley. Serve warm with ranch or blue cheese dressing. Enjoy!
