Roasted Sweet Potatoes with Chipotle and Lime

- 3 medium sized Sweet Potatoes
- 1 Tablespoon Avocado Oil
- 1 Tablespoon Maple Syrup
- ¼ teaspoon Chipotle Powder
- ½ tsp Paprika
- ½ teaspoon Onion Powder
- Salt and Pepper to taste
- 1 Lime juiced
Preheat oven to 400 degrees.
In a small bowl, combine the avocado oil, maple syrup, chipotle powder, paprika, onion powder, salt and pepper. Whisk well and set aside.
Rinse the sweet potatoes, slice in half lengthwise then cut diagonal slits about 1" apart and ¾ of the way down in both directions.
Place the washed and scored sweet potatoes into a large bowl, or a large ziplock bag, and pour in the oil and spice mixture. Seal the bag and then shake lightly until the potatoes are evenly coated.
Spray a baking sheet with non-stick cooking spray, then remove the potatoes from the bowl or bag and place in a single layer on the baking sheet, with the cut side facing up.
Bake for about 35-45 minutes, or until the edges are slightly crispy and golden brown.
Once fully cooked, remove the sweet potatoes from the oven, squeeze the fresh lime juice over the top of each potato and serve immediately. Enjoy!
