Ingredients

  • 3 medium sized Sweet Potatoes
  • 1 Tablespoon Avocado Oil
  • 1 Tablespoon Maple Syrup
  • ¼ teaspoon Chipotle Powder
  • ½ tsp Paprika
  • ½ teaspoon Onion Powder
  • Salt and Pepper to taste
  • 1 Lime juiced

Instructions

  • Preheat oven to 400 degrees.
  • In a small bowl, combine the avocado oil, maple syrup, chipotle powder, paprika, onion powder, salt and pepper. Whisk well and set aside.
  • Rinse the sweet potatoes, slice in half lengthwise then cut diagonal slits about 1" apart and ¾ of the way down in both directions.
  • Place the washed and scored sweet potatoes into a large bowl, or a large ziplock bag, and pour in the oil and spice mixture.  Seal the bag and then shake lightly until the potatoes are evenly coated.
  • Spray a baking sheet with non-stick cooking spray, then remove the potatoes from the bowl or bag and place in a single layer on the baking sheet, with the cut side facing up.
  • Bake for about 35-45 minutes, or until the edges are slightly crispy and golden brown.
  • Once fully cooked, remove the sweet potatoes from the oven, squeeze the fresh lime juice over the top of each potato and serve immediately. Enjoy!
