Slow Cooker Chicken Fajitas

These Slow Cooker Chicken Fajitas couldn’t be simpler and are just as delicious as stovetop or grilled versions.

Chicken breast is cooked along with bell peppers, onions and simple fajita seasoning for a dump-and-go Tex Mex fiesta the whole family will love.

INGREDIENTS

– Bell Peppers – Onions – Diced Tomatoes – Garlic Salt – Chicken Breasts

Place prepared bell peppers and onions in the bottom of a slow cooker. Add half of the diced tomatoes and sprinkle the garlic salt evenly over the top.

Lay the chicken over the top of the peppers and onions and sprinkle with taco seasoning and chili powder. Add the remaining diced tomatoes and place the lid on the slow cooker.

Cover and cook on high for 3 hours, or on low for 4 ½-5 hours, until the chicken is cooked through and the veggies are tender.

Once cooked, remove chicken from the slow cooker and place onto a cutting board. Slice into 1" strips, place into a separate bowl and squeeze the juice of ½ lime over the chicken to season.

Serve chicken and vegetables in warmed tortillas with sour cream, avocados, salsa, shredded cheese, shredded lettuce and lime wedges. Enjoy!
