Lucky Charms Cookies

These soft and chewy Lucky Charms cookies are filled with cute, colorful marshmallows and white chocolate chips.

They’re easy to make and perfect for kids birthday parties, St. Patrick’s Day, or just for fun.

– Butter – Brown Sugar – Vanilla Extract – Chocolate Chips – Lucky Charms Marshmallows

Separate the marshmallows from the Lucky Charms cereal until you have 2 cups of marshmallows. Set aside.

In the bowl of a stand mixer, cream together the butter, sugar, and brown sugar using the paddle attachment for about 3–5 minutes, or until light and fluffy.

In a separate large bowl, whisk together the baking powder, baking soda, and flour. Mix until combined, then add the flour mixture to the butter and sugar mixture.

Add the white chocolate chips and Lucky Charm Marshmallows, mixing on low just until combined. Do not overmix!

Using a small ice cream scoop or spoon, scoop 2" balls and place them on an ungreased or parchment-lined baking sheet about 2" apart.
