In a separate mixing bowl, combine the eggs, buttermilk, melted butter, and vanilla extract, and whisk well to break up the eggs. Add the green food coloring and mix again.
Add the wet ingredients to the dry ingredients and gently fold them together until well combined. Do not overmix; the mixture should still be a little lumpy.
Transfer pancake batter to a piping bag and cut a small tip off of the end. Quickly pipe the outline of a four leaf clover onto the griddle and then fill in with pancake batter.
