Easy Caprese Chicken

This easy Grilled Caprese Chicken is the ultimate summer dinner recipe.

It's made with perfectly grilled chicken breasts tenderized in a pesto chicken marinade, topped with fresh mozzarella and cherry tomatoes seasoned to perfection.

INGREDIENTS

– Chicken Breast – Pesto – Lemon Juice – Cherry Tomatoes – Fresh Basil

In a large bowl or freezer bag, add the pesto, olive oil, lemon juice, garlic powder, and salt. Give it a good mix, then add the chicken breasts.

Zip the bag closed and roll the chicken around to cover completely with the pesto marinade. Let the chicken marinate for 2-24 hours in the fridge.

To make the tomato basil mixture, cut the cherry tomatoes in half. Wash and pat dry the fresh basil, roll it up, and slice thinly.

Add the lemon juice and just a little garlic salt. Let this mixture sit until the chicken is ready. This can also be made a couple of hours ahead of time.

Coat the grill with non-stick cooking spray. Remove the chicken from the marinade and lay on the hot grill. Cook for about 4-6 minutes, or until golden brown.
