This Corn Salsa is sweet, crunchy, zesty and oh-so-easy to make. Full of sweet corn, cilantro, fresh lime juice and crisp veggies, serve with tortilla chips, or to add to tacos, burrito bowls and more.

It’s vegan, gluten free, super healthy and can be used in so many different ways. Serve with a big bowl of lime tortilla chips.


– Limes – Cilantro – Bell Peppers – Red Onion – Frozen Super Sweet White Corn

If using frozen corn, thaw at room temperature or in the microwave and drain.


In a large mixing bowl, combine the thawed corn, red onion, bell peppers, cilantro, lime juice, garlic powder, salt, and pepper. Mix until combined.


Refrigerate until ready to serve. Serve with your favorite corn tortilla chips. Enjoy!


What’s the best kind of corn to use? When fresh corn on the cob isn’t available, I like to use frozen super sweet white corn. You can find it in bags in the freezer aisle.

What other ingredients taste good in Corn Salsa? Black beans are one of my favorite additions to this salad.  They make it taste even more like Chipotle Corn Salsa and add a little extra protein.
