Garlic Herb Roasted Cheesy Potatoes
Itโs virtually impossible to find someone that doesnโt absolutely love these fully loaded-roasted red potatoes. We oven-roast the potatoes in a garlic and herb mixture, then go a step further and coat them in ooey gooey cheese, bacon bits and sliced green onions. So yum!
This side dish goes great with just about any main entree, including Slow Cooker Kalua Pork, Slow Cooker Pot Roast, Baked Honey Mustard Chicken and Teriyaki Glazed Salmon. Ingredients in Garlic Herb Roasted Cheesy Potatoes
- Potatoes - we use red potatoes for this recipe, but you could substitute Yukon gold, fingerling or even Russet potatoes. Be sure to wash potatoes and cut them into quarters.
- Oil - we love avocado oil, but you could also use olive oil.
- Garlic Powder and Onion Powder add a sweeter onion and garlic flavor than if you used fresh. They are also nice because you donโt have to worry about them burning.
- Dried Italian Herbs - you should be able to find this in the spice section of your grocery store. It might be called dried Italian herbs or possibly an Italian herb mix.
- Salt and Pepper
- Cheddar Cheese - any type of shredded cheddar will taste great.
- Bacon Bits - you can purchase bacon bits, but it is so simple to make your own and will taste much better. To make homemade bacon bits, slice any type of bacon into ยฝโ slices, then cook in a saute pan over medium heat until browned and crisp. Transfer to a paper towel-lined plate to drain and cool.
- Green Onions - sliced thin, these make a delicious fresh garnish. You could also use fresh chopped chives.
How to Make Cheesy Roast Potatoes
- Season potatoes. Place potatoes in a large bowl or a ziplock bag and drizzle them in 3 tablespoons of avocado oil. Toss the potatoes until evenly coated, then add the garlic powder, onion powder, Italian herbs, salt, and pepper. Toss again until the potatoes are evenly coated.
- Bake. Transfer the potatoes onto a parchment-lined baking sheet and spread them into an even layer. Bake in a preheated 425-degree oven for about 20 minutes or until the edges of the potatoes begin to brown. Using a spatula, turn the potatoes and cook for another 15-20 minutes so the other side can brown.
- Add cheese and bacon. Once the potatoes are tender and brown, and crisp on the outside, remove them from the oven and add shredded cheese and bacon bits. Return to the oven to roast potatoes for an additional 10 minutes or until the cheese is melted.
- Serve. Remove the potatoes from the oven and transfer them to a serving bowl. Garnish with sliced green onions, then serve immediately. Enjoy!
Variations for Roasted Cheese Potatoes
- Cheesy Fiesta Potatoes - just add sour cream and hot sauce drizzle.
- Cheesy Bacon Ranch Potatoes - toss in ranch dressing mix before roasting.
- Parmesan Roasted Potatoes - skip the cheddar cheese and use Parmesan instead.
- If you have some leftover cheesy potatoes, you can dice them up and add them to these breakfast burritos. So yummy!

- Freezer: if you have a lot of leftovers, you can transfer to an airtight container and store frozen for up to 2 months. Thaw in the fridge overnight before reheating the next day.
- How to Reheat: transfer potatoes to an oven-safe baking dish and cover with foil. Warm in a preheated 350 degree oven for about 10-15 minutes, or until warmed through. For a smaller portion, you can also reheat in the microwave on high for about 2 minutes.

- 3 lbs Red Potatoes washed and quartered
- 3 Tablespoons Avocado Oil
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1 teaspoon Dried Italian Herbs
- 1 teaspoon Salt
- 1 pinch Pepper to taste
- 2 cups Cheddar Cheese shredded
- ยฝ cup Bacon Bits
- 3-4 large Green Onions sliced thin
Instructions
- Preheat the oven to 425 degrees.
- Place potatoes in a large bowl or a ziplock bag and drizzle them in 3 tablespoons of avocado oil. Toss the potatoes until evenly coated, then add the garlic powder, onion powder, Italian herbs, salt and pepper. Toss again until the potatoes are evenly coated.
- Transfer the potatoes onto a parchment lined baking sheet, squeezing out as much of the seasoning from the inside of the bag as possible. Place the potatoes on an even layer on the baking sheet.
- Bake at 425 degrees for about 20ย minutes, or until the edges of the potatoes begin to brown. Using a spatula, turn the potatoes and cook for another 15-20 minutes so the other side can brown.
- Once the potatoes are soft on the inside and crispy golden brown on the outside, remove from the oven and add shredded cheddar cheese and bacon bits. Return to the oven to roast potatoes for an additional 10 minutes, or until the cheese is melted.
- Remove the potatoes from the oven and transfer to a serving bowl. Garnish with the sliced green onions, then serve immediately. Enjoy!
